Wow!  What a difference you've made!  That old stator cover looks terrible!

No need to remove anything to change the swingarm bolt.  When you pull it out simply put a similar bolt, like a front axle bolt or even a cheater bar in place to hold it while you withdraw the bolt.  

Those bars appear to have a higher rise than stock bars.  Is it just the way the photos were taken?  I agree on the ty-wraps.  Partzilla sells OEM wraps identical to the originals.  Kawasaki used short ones on the bars.
 
Just measured the bars... they're 4" rise.  If my memory serves me correctly, the European Z1 and KZ900s came with 2" bars and the US had 4".  Anyone know for sure about that?

John Brooke's book indicates there was a low bar (PN 46006-013) available in the Euro market as an option for the '75 Z1-B model year.  No indication there was availability any earlier.

Not many things as fulfilling to me as taking a big pile of rusty junk and making a beautiful classic out of it.  A big set of hooters maybe... definitely.

It looks really nice! 

I saw a couple of things you may want to do.  First, the swingarm bolt goes from right to left.  The nut should be on the left side.  Second, there should be two cable ties on each side of the bars.  
 
  Just switched the swing arm axle around.  It did shift because I couldn't find anything close to the diameter of the axle to hold it in place but it was easy enough to move the arm around to line it back up again.

Nice job! 

If you're going restoration, I made a diagram of where all those wire and cable straps go.  I think theres only 2 or 3 sizes.

I know the harness tie location and size are indicated in John Brookes book.
