Is anyone familiar with primers and paint?

That olive drab coating was some type of anodizing. But are you looking for OEM restore? Correctness? Or just to coat and not rust?
Get like an Army olive green color in a urethane spray can, even have it mixed at a car auto paint business that mixes paint.

The olive drab clamps were actually zinc plating, with a final quick dip to get the colour. I've tried it and have not been successful.
If you're not concerned with correctness then I would suggest buying new clamps rather than painting. But if you want to go low cost you could strip the old ones and paint. Any paint would be acceptable. Just make sure the surface is clean of any oil before spraying.

I have several restored bikes along with a 2006 Goldwing with a sidecar. My wife has a 2019 Suzuki DR 650 for on and off road.

That "olive" color is a post zinc plating process, known as "passivation".
It is basically a "colorised" oxidation of the zinc plating. (Zinc typically oxides to an unattractive dull grey color)
The three colors I am familiar with are yellow (most popular), black and olive.
