It's called Aqua cell foam it comes in a couple different colors (not important)
it comes in 1" thick by 24"wide by 60-80 inches long it is a closed cell foam that can be sanded
and formed with a knife, cheese grater, sand paper and other bodyshop supplies
I have been doing a little upholstery work lately and am amazed at all the products we didn't have when I was doing this stuff the hard way.
I am teaching the guy who owns the bodyshop some of the tricks of the trade so to speak as I am just getting their upholstery department up and running. the new patterned vinyls and foams available are really cool
the foam is 120.00 bucks a sheet but will do 3 seats (so the rep says)
I will be designing me a new seat this summer I am sure!

Is it available in different thicnesses, or do you attach it to your old foam to get the desired thickness?
It looks like the bike in your avatar will be a lot more comfortable after you get your seat built!!

use a good glue (i use DAP landau top adhesive) 3M makes an adequate areosol available at walmart.
best bet is to have your local auto trim comapany sell you a quart of their glue. put it in an old siphon feed paint gun (find em between 20.00-50.00 bucks at Pivco-harbor freight.
I havent done one yet but in the old days I would've cut my existing foam down to keep the existing seat pan contour and glued layers over it and form the seating surface.
While building my seat the old foam doesnt seem to take to being glued to (old and dry) so if I am working on an old seat. I would build from scratch by layering

For sure a dying trade
the owner of the bodyshop was in Daytona during bike week and watched a guy make a harley seat so when he got back I got on the phone got some samples sent. we ordered a sheet of the closed cell and then 5 gal of glue about 15 sheets of varying foam 10 yards of headliner, couple yards of vinyl and couple yds of different faux leather patterns (he wants to learn the trade lol)
but as far as my projects go broke is the norm at the present
