I have a 78 KZ1000 that has a fiberglass (I'm assuming) front fender.... I was wondering what the best way to strip the paint off this material is. Is it the same procedure as metal? Is priming and painting the same?

Try some brake fluid. It is a slow acting stripper that is safe for plastics unlike the other paint strippers.
Get an empty clean coffee can, a soft bristle brush and time to kill. Do this in a well ventilated area as the fumes can be strong.
After stripping, a couple of wash/rinse cycles should remove the old paint.
