I saw a picture of a kz1000 chopper and it had the front and rear brakes connected to the hand lever. Is it okay to do this? I guess being a chopper he would be only cruising in town at low speeds.

Yes! But only if you are using a master cylinder with the capacity equal to both the front and rear master cylinders and utilizing a proportioning valve.
