Will a gpz 1100 motor fit in a gpz 750 frame without too much engineering? Both are from 82

It will fit but requires fabricating skills and access to a welder.

It's a custom seat modeled after the 82 ELR. The bike took me three years to build. Lots of fabricating, welding and engineering.
