Handle grips

I want to replace my handle grips, please see attached photo.
1. What is the best way remove it, use knife and cut it of?
2. Do you recommend some new handle grips webpages ?
1981 KZ650-D4, with 1981 z750L engine (Wiensco 810 big bore).

I prefer the stock grips, but they can be hard to find & expensive.
On my mountain bike (bicycle). I installed Oury grips similar to the ones at Z1Enterprises. the rubber is very soft & comfortable.
