As a follow up....
I measured the three rotors with my micrometer and you all are right.
The single brake disk thickness is about +7mm and the dual disk brakes disks are +5mm thick.
That's quite a big difference when you take into consideration how small the caliper's piston(s) actually travel, for full braking pressure.
I guess I'll look around this Fall/Winter for a good condition rotor for a single brake system and or, take this one to a machine shop to see if a few thousandths off will clean it up.

I put my thinner rotors on the bike. I had to pump it a bit but there's no issues with leaking or braking even though my calipers are old H2 ones. I doubt it will be a problem.
