Decided to bite the bullet, and bought the necessary sprockets from Z1 to convert to 530. Howver, the new CS sprocket does not have holes in it like the OEM one for the "keeper", to lock the bolt. I would like to use Loctite, and I am leaning towards their blue (medium), that is not "permanent, as opposed to their red variety that is permanent.

Has anyone done the chain size conversion on a KZ1000 or KZ1100, and used Loctite to help secure tbe CS sprocket bolt? If so, what strength/color did you use, and how long have you been running it since?

Yes, Blue loctite is good! Don't use red!
Years ago on my dragbikes, I used a loctite product called "VIBRA-TITE" Luckily supplied by my work tool room. B)
It is still for sale for about $18 an ounce. It stays pliable.
Or if you feel safer, drill a small hole for the tab.
