1985 GPZ 550 rear disk, speedo and grips

Hello,
I got the engine/trans fixed on my bike. Fixed the bent shifter fork, made a new exhaust baffle and jetted my carb.
After a test ride I noticed a couple things. First the speedometer does not work. I checked the cable and it seems ok.
Second item is the rear disk. The pads are gone and the rivets have worn the rotor. Can the rotor be turned? What is the economical way to repair?
The foam grips are toast. What grips do you recommend?
