As for your question regarding sizes to use, the proper way to determine this would be load analysis and engineering data on the strength of the tubing. The backyard method is see whats on the bike and go one or two sizes up. I would think a shock mount should be a pretty stout hunk of iron. Just my $.02 worth.

I just checked. 1.125 X .095 wall DOM is $3.03 cheaper per foot at Speedy Metals. $4.75 vs $7.78

I have been a steady customer of Speedy Metals for about 6 years and have not found another supplier to beat their prices or service.

kz1k, the material from your link I was refering to was listed as 1"OD x 0.083" wall x .834" ID A513 Type 5 tube.

The 1.125" was not listed in 0.083 wall thickness. The .095
wall thickness will also work. The goal is that the two tubes material thickness is close (does not need to be exact) to make it easier to weld. Large material differences (like 1/2" to 1/8" material) can be a problem.
Looks like TomW's source is a good one.

Yes there are other tube sizes(center backbone is larger and rear hoop is smaller)but the engine cradles all appear to be the same size (at least on the large frame bikes).

From the link you posted, either the 1" or 1.12" OD and .083 wall A513 Type 5 tube will work for your upper shock mount application. Which ever is the better price/availability would be my choice.
