If you go for a bobber you can cut some fenders down but I don't recommend cutting the frame. The bike is worth more with an uncut stock frame if you ever sell it. (even if you offer it with the bike.)
If you have some basic welding skills there are a few books and some videos on how to build frames including "How to build a cheap chopper" (ISBN 1929133170)which building a frame, frame angles and how to measure them as well as assembly ideas.
If you want a video google "Ron Covell". He has a video series that looks pretty good.
If you decide to buy a frame there aren't any current chopper frame manufactures that I can find. There was a company called Amen who made some chopper frames in the 70's and you can still occasionally find one one ebay or at a swap meet. They were hard tails with plunger rear ends. Pretty cool.
Whatever you decide good luck with the project.

Let's be honest here; you know you really want a Harley and we know you really want a Harley. So why not just buy a Harley? That way you can chop it, slice and dice it, or run it through a blender and other Harley chopper guys will still love it and admire you; plus you won't be destroying a KZ1000. B)

Because if you build a Harley chopper it's a Harley and if you build a chopper powered by anything else it's a real chopper.
Back in the day everyone was chopping Kawasakis and Triumphs. These guys were pioneers who built their own parts. Today's Rolex rangers can buy anything online bolt it on and call it a custom. A kaw chopper is art.
