KZ1100 81'' shaft/WHATS THE BIGGEST REAR TIRE

what is a good all around tire for wet or dry roads and what is the widest tire i can go with on the rear with this bike that wont effect the handling in a corner or turn

Any tire that is wider than stock that is installed on a stock rim will have a slightly smaller contact patch compared to a stock tire on a stock rim. The wider tire's bead will have to squeeze onto a narrower rim than intended resulting on a profile that's more curved so you lose some contact patch.
