I have a set of forks I want to put on a 750 twin, the calipers are for 10in rotors, the forks on the bike now are for 12in single disc, I want to keep the spoke wheels, what discs will fit, I found that the hub is drilled and tapped on both sides so you could put dual discs on, I have everything but the right size discs

The 650/750/1000 disk brake rotors are all the same diameter, and those are the only ones that I know for sure use the four bolt mounting.
You may have to make a new caliper bracket to move the caliper farther away from the axle centerline so you can use the stock rotors.
Perhaps you could have the rotors chucked in a lathe and cut down to the smaller diameter, you will have to make sure there is enough serface left for the brake pads to ride on though.
