Will the hub and spokes from my KZ900 lace up directly to one of these excel rims, or do you have to order new spokes?

I don't know for sure, but from what I've read, the spokes need to be a little shorter because many of the wider aftermarket rims have a "deep drop center". It would depend on your specific rim. Anyway, here's a link for a site I ran across just last week and it is awesome for information and parts. I just wish all of this cool stuff was cheaper! Maybe it will help...

Did you buy stock length spokes? If so, and they need to be shorter, Buchanan offers a service to shorten spokes too. Might be cheaper than buying new.
