I want to make a change from LTD handlebars to some GPZ style. The LTD's are knurled but the superbike styles are not. Will this be a problem?

That really won't be an issue but the extra length of your existing cables and hoses probably will. You might want to look at getting cables and hoses from an early GPZ550 to lessen your potential headaches.
