Got home from riding my other bike and decided to check again (the garage is hot today btw), about 85 degrees.
Put the multimeter on and after about 3 min of stationary running, the voltage on the multimeter would dip from 14v to 10, then 13 then back up to 14.

Could your meter or meter connections be wrong. Even if there was a short pause when the regulator was not supplying current, the battery would not drop to 10v.
Or, possibly a bad battery could cause this.

As I mentioned in the original post, "new AGM battery, new electrosport reg/rec" all of the components are new, including the battery. its not the battery. If you look at the original post on the first page, you will see this. Thanks for trying to help though.

Yes Shane, garden of England. I'm actually a couple of miles from Brands Hatch we're I misspent much of my youth in the 70's and 80's.
Ckahleer has a valid point regarding the battery which is why I kinda ignored the voltage drop readings you gave earlier. 
Regardless of what the reg was doing if your meter readings were across the battery poles they would not drop below the battery voltage unless you had a bad connection to your meter.

Your charging system sounds fine.   14.3 V at idle is no problem and suggests your stator is strong.

The coil issue is separate.  What coils are you using?  5 ohm coils?

Hey! Nessism!  Thanks for giving me a sense of relief about the stator.

The ignition coil is brand new, the emgo replacement seen below. Ive never been able to find a kawa brand replacement.

Ive only EVER had this problem when its above 80 degrees out. its so weird. I'll be glad when I get to the bottom of it.

Those coils should be okay...I think.  

One thing I do know, you should not allow your bike to idle for 10 minutes, unless you put a fan blowing on the engine.

I'm with ckahleer...something is up with your voltmeter going to 10 volts.
Where exactly were your voltmeter probes?
Take the measurements again to see if that happens a second time.
Your battery should buffer your voltage swings.
Meaning your voltage should not drop below battery voltage.
