Is there a way to simply the wiring system?

Hello everyone and greetings from Louisville, KY! I am about to begin restoring my 1981 KZ750E, and was wondering if there is a way I can redo the wiring system but in a more simply way! As I look at it, there are a LOT of wires of which are over 30 years old, and I've had to retape some wires over, so I want to redo the wiring system, or should I just look for a new system? Your input would be great and thanks for your help!!!
