Hello All,
New to your forum and really enjoy it. I have a 1978 KZ650 B2 which I bought new in 1978 and has been perfect for 35 years. My wife and I have sold the farm as they say and become full time RVers. I gave the KZ to my son and he has had nothing but trouble with the coils. He took it to a fellow and he replaced the coils with Tec brand coils and they (within 100 miles) got so hot they melted the little spacers which were plastic. Any suggestions on where to start other than throwing the coils in the trash and replacing them with what you suggest?

Those sound like the wrong coils. The Ohms are not matched to the system, making them pull more current and overheat. Surprised they didn't burn out.
I'd look for the correct coils for your model. Try at z1enterprises.com, they have Emgo coils pretty reasonable. Plus other Tune-up parts.

You old ignition coils might have been rated for 3-4 ohms. What replaced them pulled too much current, causing the problem. Never use ignition coils rated for a car too, as they may create more electrical problems.

These won't cook themselves, assuming your system voltage is 14V like it should be. If your reg is bad, it could be putting 18V on the system.
