Will the IC Igniter off of a 1980 KZ750 (igniter #800205) work as a replacement on my 1980 KZ1000 (igniter # 790921) ???

It should, as long as both are factory Kawasaki parts, and both are meant for mechanical-advance. The wires may be different length and may have different connectors, though, so you might have to do some splicing.
