For really good corrosion resistance, use the "Tinned" wire(actually solder coated)and if flexability is needed, uncoated but insulated wires should be used.

I'd imagine the boat suppliers in your country have regulation about the type of wire used in marine and freshwater boats. If it were me, I'd check to see what types and color of wire is available.

Good point about the colours, they're limited, black, blue, brown, green, yellow & red. Now I probably could get away with using just those colours but I'd prefer a wider range. That's a pity as the climate in Ireland is a bit damp!

When I worked at General Dynamics/Convair building missile test equipment, all of our wires were tinned copper and white Teflon insulated. We used white heatshrink tubing with numbers and letters stamped on, indicating circuit types and functions. Some of our cables were as large in diameter as 3" and sometimes 40' long.

The exception was in the single, double, tripple and quad conductors that came with a braided shield for electrical noise supression. The conductors were red, blue, yellow, green & black with white thrown in for identification.
