Since the wheel is not stock, the brake rod may be the wrong length or the brake torque-arm may be the wrong length, or the position of the brake pivot may be different on the hub, or the position of the brake torque arm pivot may be different. There's a lot of variables that could be different due to the different wheel.
Probably the only way to verify the shoe condition is to actually take it apart and look at them.
