You wouldn't actually see the spark - do mean those ones that fire a little lights with every pulse? I've seen those..
Here's an example from eBay:

You can get them from JP Cycles I think. I also recall KuryAkyn once sold them. I got a set from JC Whitney and ran them on a Kawasaki Vulcan 1500A. I got ones with red clear plastic and they looked kind of neat at night. I used them for about 15K miles and one cracked around the base and I replaced them. I saw them initially in a SciFi movie that featured a Harley that had them... Harley Davidson and the Marlboro Man... You can sort of see the rear plug on the Vulcan lighting up in this pic but the pic isn't all that great for seeing the plugs.

Years ago I read about a spark plug that has a transparent insulator through which you could see the color of the explosion in the cylinder. It was supposed to be a good tuning tool, at least till the carbon covered up the glass on the inside.
Kinda of suprised they didn't catch on.

Here is another variant. I don't know if this is what you are asking for.
They are called Colortune, and they can be used for adjusting the air/fuel mixture.
This is one place you can buy it:
