Don't know anything about 750.
But 1979-80 KZ1000 E1-E2 shaft drive models can be changed easy to chain drive. They have the MarkII 1000 cases. All you need is a chain drive output shaft and the aluminum side cover.
I would assume your model can be done also. With same type engine if they have a chain drive model within a few years.

I'm not familiar with the 750 but what I can tell you about the 550 is this: to change from shaft to chain drive is possible but you need to split the cases. The output shaft is shorter on the shaft drive bikes. You need the longer output shaft from a chain-driven model. It's highly likely that the situation is the same with the 750.
Go and look up the GT750 and the GPZ750 on cmsnl. Look at the transmission components and see if the output shafts are different. They probably will be, because the shaft uses a bevel drive that bolts into a tri-lobed cam arrangement, so it has a screw-on bit at the end, but has to be shorter than the output shaft for a chain-drive model so that the bevel drive doesn't stick out too much, if that makes sense. Check cmsnl or Fowlers or anywhere for blow-up images of the engines, and find out the part numbers of the output shafts on each bike.

Aside from changing the output shaft, I believe you'll need to change the shifter location...if memory serves there are two spots. It isn't a very complicated conversion once you get past the scariness of opening the engine.
