I decided to finally replace all gaskets and do a vacke job on my 83 GPZ 750. When I went to measure the valve gaps the intake side all valves where so tight no feeler would fit. The exhaust side is just as bad but I can get a .005-.003 feeler in them. I wanted to know if any thoughts on what's happening. I wanted to ask before I remove the valves and rebuild. Also none of the shims had numbers on the valve side of shims. The bike did run before I disassembled.

I think the shims should have the numbers printed on the face of the shim, not the side. Measure with a micrometer to be sure of what you have. In my experience it;s just normal for valves to get tight over time.

There is no numbers on either face of the shims and not even the smallest feeler fits under the intake side. My concern is how to go about shimming it again once I put it together since I don't have a starting point of reference with the valves so tight

I don't know what size they are to go down from. My service manual is not much help.

Your manual caliper should be fine. What you need to measure is the thickness of each shim, then you will know where you are starting.
Since there is no clearance, going down two sizes from where you are should give you a measurable gap.

The valve clearance you had before teardown will be irrelevant after a valve job. That will be one of the final steps on reassembly. Wait till then and start with the thinnest shims you have to get a reading. Z1 enterprises sells shim sets to work with.
