I have a 750 engine running fine, but was leaking oil from the head gasket and when I open up the engine I found the cylinders "walls" to not be in perfect condition, please see here:

I have some question about the valves, what shall I do to get the valve in good condition?

When it comes to the valve, what part should I replace?
The valve it self, or can I just clean and re use?
Oil seal?
Valve guide?
more to replace ?

I was thinking to deliver the top into workshop, but what shall I advise them to-do?

Don't take it to just any shop. They can trash the head.

I understand it`s a shop with good references.

But what part do I need ? :)

Only the oil seal?

Oil seal only at first, and have the shop grind the valves and then check the seats through careful inspection and lapping to check the seat contact area. If the seat shows a good contact then you don't need to grind them.
