Sorry for yet another noob question, but I'm not aware of what this thing is. It's in a loop off of the outlet where the oil pressure sender is. It is branded as Kerker item.

2 stroke rider
TZ 250, TZR 250, RD 400, RZ 350, RZ 500, WR 200, KDX 200, Vespa ET2
And one 4 stroke: 1979 KZ1000ST

Is it plumbed in between the engine and oil cooler? I’m taking a guess but I’ve seen oil cooler bypass valves before like that, they shut off flow to the cooler when riding in cooler temperatures. I’m not familiar with that one nor can I find anything like it online when searching for a kerker cooler bypass valve.

There isn't an oil cooler on the bike, although I suppose you could put one in where the loop is. Thanks!

It's an aftermarket thermostatic oil cooler valve.
It stays closed until the engine gets to running temp then opens to allow the oil to circulate through an oil cooler.
By your comments I understand that the cooler has been removed and there is just a loop of hose in its place in which case it currently serves no purpose and can be removed or a cooler fitted.

What size/volume would I need for this bike? I can't find an OEM cooler so far. There are several on ePay but some seem small and others massive.
This won't be a road racing bike, just a rider with some weekend touring. Would I need an oil cooler?

If the motor is stock and you don't live in death valley, you don't really need one. The question is how to restore the plumbing. A bypass hose would do it, but that might be ugly, and a potential leak. It might depend on what they did when they installed the cooler.

A generic 10 row universal cooler will be good enough.

I run a half width one on my everyday Zed .
You will have to buy the hose fittings and make a bracket for it though ...
Either that or remove the cooler take offs and fit a stock pressure switch.
A stock or mild tuned engine won't suffer or benefit from either option.

With a cooler like that you could run through Death Valley all day long and the oil still wouldn't get hot!
