My sprocket is starting to roll. Which understandable it doesn't look like it's been replaced every. Looking into a new chain and sprocket. Should I go ahead and replace both sprockets at the same time? Any advice on good brands or brands to stay far away from? Should I go up a size?

YES. Both sprockets should be replaced when installing a new chain. The chain and sprockets wear together, so if you put a new chain on an old sprocket the chain will wear prematurely. If you put new sprockets on an old chain the sprockets will wear prematurely.
Regarding which brand to buy - I highly recommend getting an O-ring or X-ring chain from Tsubaki, EK, D.I.D. or some other premium chain maker. Using the stock size is the correct thing to do. Ed

I agree with Ed about changing both the chain and the sprockets at the same time. I strongly suggest making the switch to a 530 chain and sprockets though. 530 is plenty strong and it's lighter and cheaper than the old style 630 chain/sprockets. 630 is virtually obsolete these days for these reasons.
When making the switch to 530 you need to recalculate the teeth count on the sprockets and purchase a longer chain. If you post up the stock sizes we can help advise you from there. Which specific model bike do you have?

Oooops. my mistake. I thought it already had a 530 chain, but Nessism is correct - the stock chain is 630. I agree with him that switching to a 530 would be a good mod. Ed

Just saw in another thread that the bike is a 1983 KZ750L model.
Stock chain is a 88 link 630, with a 13T front and 33T rear sprocket.
Using a 530 chain you will need a 16T front and 40T rear sprocket, and a chain with 105-106 links.
