What should the compression be at on a 76 Kz 900 with the 1075 kit

That totally depends on the Pistons used and the way they are built. Just over boring a few millimeters doesn't automatically change the compression ratio unless the Pistons are built to do so or not build to do so.
My 1075 kit is 10.25:1
Others can be what ever the manufacturer specifys.
