I wonder if anyone has used a degree wheel and measured how far the cam timing has really changed with a 30,000-50,000 mile cam chain.

No, but I have used standard cams with a skimmed head and it makes a noticeable difference, I needed to dial them in on slotted sprockets. I increased the overlap by a touch too.
