Is it possible to convert a shaft drive 750 engine to chain drive?
1980 KZ750e
1981 KZ650 csr (fate undecided)

Anything is possible if you throw enough money at it.
Is it practical, no. Better to swap the engine/bike for a chain drive if that is what you want.

I saw a thread on here once about it. I can't find it but I believe you change the output shaft on the transmission, put a new sproket cover and sprocket as well as a wheel, chain and swing arm. You could get a cheap blown up engine and do a swap cheap. It doesn't look too hard. Here is a thread from streetfighter on a swap.
