Engine Gasket Replacement

Hello
I have a 1982 Kawasaki KZ750 Spectre. I have a few oil leaks around the gaskets on the engine, I would like to take this apart and replace all gaskets from the bottom up.
Is this a good idea? What other problems can I run into when doing this? Is there anything else I should be looking at replacing while I have it apart.
Do I have to take the valves and shims out when doing this? Any ideas or assistance would be great.

First try re-torqueing the head and case bolts.
No, valves/shims do not need to be removed for gasket replacement. But you should check valve clearance.

But if he does from the block up then the cylinder will have to come off. And might as well replace the rings while he is there.
