What do the reed valves on the GPz 750 cam chain cover do? Would there a benefit from deleting them (ie getting a head cover without reed valves)? If so, are other modifications required?

They are for the Fresh Air Emission System. Fresh Air Is drawn into the Exhaust port, to help reduce emissions. Like the old Air Pumps used on cars from the same period. They do no harm to your motor. You can delete it if you don't have Emission testing in your area. There are block off plates sold, APE has them kzzone.com/billet.html
Your service manual will show the related parts, the Air Switching Valve, and vacuum lines.

Connect the two covers with a piece of hose.
