Might be the primary chain clacking at idle. Could be the cam chain. Hard to say just guessing.
White smoke is likely valve seals or maybe rings blow by.

The 1100, 900 and 1000 cc bikes do not use a primary chains. Unsychronized carbs will make the bike rattle at idle. I have had bikes that after sitting for awhile they smoke on start up. This usually goes away after riding it and getting the engine warmed up. And no you cannot buy a "crate" engine for these bikes.

"IF" your compression is OK,
it sounds like all you need is a good tuneup and carb synch by someone who knows that kind of bike.
Don't forget an oil and filter change.
Stock air filter?
Make sure it's not damp or dirty.
Last thing, make sure the drain holes in your exhaust are open on stock pipes.
Good Luck with it.
