I believe you can take at least .030" off the head, and I know you can take off .025" (I've done that), and I've heard that some take off .035". Yes the valve sticks up above the surface, so be aware of that if you bench shim the cams or you'll bend the valves (seen that happen too).

Slot the cam sprockets so you can time the cams.

Conventional wisdom says you can cut all the way to the edge of the 45 degree angle on the valve seat.
