A shop that resurfaces automotive flywheels should be able to do the job.

I did think of that but, most flywheels arn't stainless. Figured it would take a different type of wheel and if they are not set up to do that .......

What? 25 years as a machinist and you don't have a lathe in your basement?

If the rotors aren't scored too deeply try one of these, www.enginehones.com/rotorhone.html
If they are real bad they'll need to be cut, preferably on both sides simultaneously so the sides are dead nuts parallel. DAMHIKT! A brake rotor lathe is the machine tool of choice. Try an automotive brake shop. You may have to make an adapter for the lathes arbor. I can hone them here if you're close to West Bend WI or want to ship them.

Why does it need to be resurfaced?

Stainless motorcycle rotors should be precision ground instead of being turned on a brake lathe like car rotors. see links for additional info:

They do have to be ground, not turned on a lathe. If they are not warped and only have minor grooves, they don't have to be surfaced. However, I did mine myself to get them smoothed out after a lot of wear. I bought some new rectangular sharpening stones and used oil to face them by hand. Just set the rotors in your lap and do it watching TV, it takes a long time. Keep turning and working the faces and it will smooth out. It will only take off a very slight amount of material, it mostly grinds down the high tops of the ridges.

Yea, Iv'e been doing machine work for a long time. But, I don't have a flywheel grinder or a brake lathe for that matter. I remember seeing the ad on ebay for having them resurfaced but the guy isn't listing it now . The resurface disc looks interesting, anyone ever used one?
