Would first measure clearances.

Keep good clear notes of existing gap for each valve.

If out of spec, then re-shim as required.

Sometimes an existing shim may be used with another valve, which could reduce number of new shims required.

Keep good clear notes of shim size and clearance on each valve, so this info will be available next time the clearances are checked.

Unless existing gasket is perfect, would install a new gasket when reassembling.
First assure mating surfaces are perfectly clean and pristine.
Install dry. And it won't leak (at least mine never do).
A thin film of silicone sealant may be applied around each half-moon just before installing the gasket.

Good Fortune! :)
