I have an opportunity to grab a '77 KZ1000 engine. Would that be a direct bolt-on to an '81 KZ1000 frame? The price is right...

There is a description of the differences between the two motors at
APE
I don't think it would be to difficult to put the early motor in the later frame, but I don't think it will be a bolt in.
I'm more of a 750 guy but I'm sure one of the 1000 guys will be along soon to confirm or correct my opinion

It depends on which 81 frame you have.
Yes, if you have two rear motor mounts, AFAIK only the 81 police frame.
No, if you only have one rear motor mount. other 81's
