one piece at a time. Here's the cylinder set all done. Question is: how do the valve guide seals come out? do I just pry them out?

Do you mean the valve STEM seals that sit on the end of the valve guide inside the valve springs ??
If so, there is a small clip that must be removed from the seal BEFORE you try removing the seal itself. The clip is there to retain the seal on the end of the valve guide and prevent it from working its way loose.
If you look closely with a strong light at the top portion of the stem seal, you'll see the little wire clip. Once the clip is removed with a little hook-type tool, you can then remove the seal itself, although on a high mileage engine the seal will probably disintegrate because the rubber is so hard.
Be VERY careful removing the seal because it's quite easy to break off the end of the valve guide that the seal sits on/around.

Different subject, but I think you were looking for a cam chain roller guide. There's one on eBay; search "nos cam chain roller guide"

Athena gasket kits contain the stem seals and their overall quality is quite good. They're made in Italy.
The quality of Vesrah kits is spotty. IIRC, they also include the stem seals in their kits. They're made in Taiwan.
There is also an outfit called Cometic making gasket sets but I have never used their stuff so can't comment on their quality or scope of supply in their kits. I'm not positive but I believe they're made in Europe somewhere.

I've seen anywhere from 50 dollars to 85 for the "complete set"

Sometimes they do..... sometimes they just say they do and leave you scrambling to find some when the gasket set arrived and you find out THEY LIED...... cough... cough....(ATHENA!)..... cough.......

Try Z1 enterprises. If no luck there, Old Bike Barn is a good source. Fleabay has them quite often.

If your looking for the best valve guide seals try APE...
the 900/1000 ones will fit and I can tell you that they do not leak oil - they are a better design than OEM and they are thicker so they do not deform over time.
