i plan on turboing my 83 kz750.. now my question is can i use the 810cc kit for a ZX750 E1 Turbo?

73 z1900 street nitrous drag bike(powered but honda)
83 kz750 turbo street fighter project

Yes. You should be able to use the P809B kit.

I may be wrong but I'm pretty sure the Turbo has larger wrist pins than the non Turbo, so you'd have to use the Turbo rods also (or ream out the stock ones).

crapers... anyone know where i can get a set of low comp pistons i can run on this motor without swaping rods or modding my stock ones?

only ones i can find ae high comp

There are other ways to lower compression besides pistons.

Make the combustion chamber in the head larger by re-shaping it.

Put a spacer between the case and block.

Remove material from the top of the piston (Depending on pistons)

Get a set of pistons made by JE Pistons, if you're going to do that, then give serious thought to 880cc, they cost the same.
