Anybody out there ever make their own copper head gasket??? If so, what thickness did you use, how did you cut the holes cleanly, and what grade of copper do you use???

No. I have never seen a head gasket that was solid copper. The ones I have seen are top and bottom copper layers over a compressible inside material that is sandwiched. The last one I got looked like it is some kind of fiberglas type of stuff in between the copper outside layers.

Why not just buy one? Is this also going on a streetbike? If so you might have some top-end oiling leaks with a copper head gasket compared to a fiber one.

I agree with StreetfighterKz...if you are putting this on a streetbike, I would use a fiber head gasket. Copper head gaskets are best used on a cylinder that has been o-ringed. Copper just doesn't seal as good as a fiber unless you have the o-rings installed on the cylinder.
