See attached Ebay auction. It's a valve cover from a '79 KZ1000, will it fit on my '83 KZ1100? I'd like to have one that didn't have all the smog control crap on top of the engine.

No. If you look at your valve cover or your head if you don't have a valve cover, you will see that yours has a bolt hole at the end of each "arm". The valve cover you need will sorta come to a point at the end of each "arm" and have the bolt hole. Here is one like you need.
1980 LTD (changed over the years), 1979 LTD (being rebuilt), 1977 KZ turbo and various KZ's in various states of build. KLX110

OK, thanks. I knew there was a change at one time that made things not interchange, guess it was between '79 and '83.

You need to keep an eye on Canadian eBay. That's where I got mine, but not after missing a few due to bidding frenzys. It seems that lots of folks are looking for them. I had to pay a hundred bucks for mine but you might get lucky and pay less. You have a "J" motor, which is '81 up. Canadian and probably European versions had smooth valve covers without the "clean air" reed system above the exhaust valves. You just plug up the holes.
