My Z500 gets really hot after a ride, it smell hot and can feel the heat coming off it but the oil light also comes on. I was thinking of fitting an oil cooler of a Z750 to it to help out.
does anyone know how it attaches to the engine? ie what the connections to the oil ways?
oh by the way i'm using 10/40 non synthetic oil

There are better oil coolers on the market than
the OEM ones. Most should come with all the fittings
and instructions.

Do you know if they will require drilling and tapping the engine block?

Any ideas why this is happening?
Some possible reasons for overheating are:
Engine performance modifications
Defective oil pump or screen clogged
Oil level too low or too high
Spark plugs bad or maladjusted or wrong heat range
Ignition timing maladjusted
Float bowl fuel level too low
Main jet clogged
Carb holders loose or cracked, loose carb clamp
Air cleaner poorly sealed or missing, or duct leaking
Clutch slipping
Brakes dragging
Compression excessive from carbon build-up
Any smoking from the muffler?
Has a plug reading been done?
IMO, adding an oil cooler may be treating the symptom, but without curing the problem,
[akin to adding a steering damper without attempting to diagnose reason for shimmy or wobble].
In any event, good luck toward resolving the overheating problem.

The easiest way would be to get a gpz550 oil pan and cooler on ebay or a salvage yard. Oil-pans by themselves don't show up too often, maybe you could just throw in a 1981 gpz 550 motor. Your carbs are the same except for the main jets and needles.
