salute !

I have next problem : after a few Km my engine become very very hot untile he stoped indifferent with what speed i'm going ..i'm not shure the carburattions is ok ...how cand I verify adjustment at carburettors ?

use the secondary jets (use the choke) and see if it fixes or helps

and check your oil because that can be a huge issue with oil cooled bikes.

And also check for correct ---

Spark plugs

Spark plug heat range

Spark plug gap

Missing or damaged air filter

Leaking carb intake hoses (between carb and airbox)

Oil level -- too high or too low

Oil viscosity -- too low (thin) or too high (thick)

Brakes dragging

Carb holders (between carb and engine)-- damaged, cracked, or loose. Clamps tight? Vacuum plugs sealing okay?

Service float bowl fuel level (perform clear plastic tube test)

Air pressure in tires

Obstructed engine cooling fins

Clogged muffler

Wheels turning free (bearings okay)

I check all this staff but ...: I speak with my frends and they say it is from carburettors

can you tell me how carburettor must be adjustment ? they say is too few gas ..or too much air ..
it is necessarily an special tools for this ?

It can be from the carbs if the fuel mixture is too lean. clean your carbs or adjust fuel air mix screws. I don't know what bike you have so I can't tell you where those are!
