I bought my H2 for a little over a grand and it came with a froze motor, and that was a hell of a deal. Gonna need at least another grand into the crank and cylinders to get started but that's after I get to it.
Short answer, probably $5,000 into the motor alone and you'll get near that. There is a trick H2 out there with case reeds instead that's supposed to be unbelievabe. And there is a guy mating a 600 polaris snowmobile top end to a 500 triple; those polaris motors are supposed to be unbelievable the 800 is like 120 horse and watercooled, powervalves and reeds to.

How dare you! Jk
I love the h2. I think it was a great bike. But yes they are pos's. Hard to believe they are worth so much.
The gt750 was an all around better bike with a lot more potential. Some folks drop 15k into the gt750 motor and they are doing 140hp. Bazza's tr750 (the famous one he crashed on) was at 148 on the dyno I believe.

barry sheen tr750 was at 115hp with a top speed of 180. Crazy for 1970
Ocelot racing modifies the gt750 bringing it to 850cc and they have several examples of 130-140hp. Either way 130hp is possible.

my old h2 a couple years after I sold it and it just seemed pretty......uncivilized-but I get the attatchment to the old beasts-nothing else quite like them. As far as hp/speed-plenty of youtube videos of guys turning very respectable times on the old beasts.
