What models would work? eBay has some pretty slim pickings for that particular year. Right now, I have the front master cylinder from a Yamaha XS something sitting on my bike, and that has to go.

Is there a site in particular I should use to buy parts from? It's a pretty big project, and this is one of the things I need to fix before I can start dressing the bike up.

I believe that a GT750 and KZ750 is of the same type if from or around the same year. If you are ok with shipment I get a lot of parts from Z power England they have a website www.z-power.co.uk , I think you will find the shipment quick, cheap and reliable.
Hope this is of some help.

My bike is a 1981 KZ750E with Honda VFR400 NC30 single sided swingarm and Aprilia RS125GP rear subframe and seat pods, engine in more pieces than my mind

You can use a front brake master cylinder from just about any Japanese bike w 7/8' bars, even modern models. usa-motorcycles on ebbaayy sells new aftermarket units.
