Does anyone have a shop they recommend that specializes in KZ restorations? I have looked at Redline Cycles in IL, redlinecycles.com.

Do you want a bike you can ride? or do you want one that you'll trailer to bike shows? What do you have to start with?
If your bike is still sportin' most of its orignal equipment, then it's some clean up and painting.
We have some members here that paint, and can probably give you an original paint scheme with modern paint.
If you pay someone to restore a KZ, you'll spend some $$, and, depending on how much it needs, it may not end up worth as much as you invested. That's OK if you're keeping the bike, but not if you plan to sell it.

This question is better asked at the MSN worldwide Z1 owners group. They have a larger percentage of purists and retoration guys there. Seems that KZrider is more about guys who just like to get the bikes looking good and then ride the snot out of them. We are not too worried about making them look perfect.

From what I have seen @ Redline, they should be a good shop to do about ANYTHING you wish them to do, restore, race, or mod it.
