Looks a lot better than when you first bought it!!
I have several restored bikes along with a 2006 Goldwing with a sidecar. My wife has a 2019 Suzuki DR 650 for on and off road.

I can see the air screw from the back side of 73 carbs (no brass jet blocking view)
I cannot see the air screw from the back side of 75 carbs, there is a brass jet blocking the view.
Is this normal ?
#1 plug is black with 73 carbs (cleaned twice and replaced plunger).

There is a brass idle air jet at the mouth of the venturi on the later VM28's circa late '74Z1 and all '75 Z1, the ones with the small drain screw. The brass jet is just upstream of the idle mix screw. The orifice of the brass jet is fairly large, guessing .035 or so if calibrated eyeball isn't failing. Should be able to see a tiny portion of the tapered end of the idle mix screw using good light & maybe some magnification.
The earlier earlier VM28's circa '72 through late '74 Z1, the ones with the large drain plug, have no brass idle air jet.
Note that Mama Kaw/Mikuni changed the taper of the idle air screw concurrent with the myriad of other changes made to the late-74/all '75 VM28's.
