750 Spectre Project and Questions

Hi every one,
My project is my first and also the first time i have worked on a bike as didn’t want to mess up my daily ride. (Kawasaki GT750) Therefore i can safely say i know no more than very general maintenance when it comes to the mechanical.
I have recently purchased two Kz 750 spectres one which has been in an accident which seriously damaged the engine and another spectre that i bought which had an MOT 18 months ago but I have no personal knowledge of if it runs or not. I bought the first one as a project my reason was it has been something that i have wanted to do for a while and the bike was fairly local and has an almost identical engine to my own bike. The poor bike has been butchered in regards to the electrics and a number of the hoses are in bad condition she is showing her age. Then a week later i was offered the crashed bike and i couldn’t pass up a parts bike that was in such good condition when crashed! The damage to the crash bike is mainly to the front of the bike.

My plan is to move everything from the crash bike that i need to replace on the other bike as the crash bike was a beautiful example prior to the crash. So that is carbs, electrics, seat etc.
My question is and this may be a no brainer but where do i start? And do i attempt to get the first bike running without moving anything or do i move everything and then worry about the engine starting?
Also when a bike is standing whilst being worked on is it best to leave oil in the bike or not? Will leaving the engine without oil cause problems when restarting?
Any other tips and bits of advice welcome!

oil is critical if you plan to turn it over. but just sitting if all openings are covered your only real risk is rust.
i would get it running before working on an engine swap to be sure you don't have to do the labor twice
unless i read this wrong are you just swapping electrics and carbs?

Hi there, thanks for the response. The idea so far is electrics and carbs, the engine is too badly damaged on the donor bike to move over.
