I don't REALLY want to take apart the engine here, because with my level of technical ability, it would never go back together again.
BUT, if this were your bike - what else would you do to it? Go crazy, I'd like to hear... and maybe I'll even attempt some of it if it doesn't look TOO bad.

Ditch the windshield, the crash bar, the seat, and do a pseudo cafe racer. A set fo clip-ons, drag bars, or superbike bars, depending on taste, a fiderglass cafe seat pan, a a general smoothing over.

If you wanted to cafe' out a KZ750, an "E" model would be a better canididate. The frame, front forks and overall steering geometry on the Spectre models aren't all that awe inspiring for hitting the twisties on.
Just my 0.02 worth here.
